Zesty Lime Salsa

I am suffering from an over abundance of garden tomatoes.  I see no end to my predicament.

To alleviate some of the tomato overload, I made salsa.  Fresh, zesty, with-a-little-kick salsa.  Hubby likes this salsa because it's not spicy, more lime-y and refreshing with a little hot.

You'd have to make it to understand.

Zesty Lime Salsa

4 medium tomatoes, diced
1/2 large onion, chopped
1 lime
1 jalapeno pepper minced, divided

Toss tomato and onion in medium bowl.  Slice lime and squeeze lime juice over mixture.  Add jalapeno  to taste.

I was out of jalapeno peppers, and I made this work with a teaspoon of Sandwich Toppers.
